Gastronomy
Traditional Canarian cuisine is based on products from the archipelago and its seashore. Among them, one of the most popular is gofio (flour btained from toasted maize). It is prepared as gofio amasado (a rolled dough made with Water and salt or sugar and eaten with fish), and gofio escaldado (gofio stirred into a hot vegetable or fish soup to make a thick paste).
A famous Canarian dish is that of papas arrugadas con mojo (little salted unpeeled boiled potatoes with a spicy sauce).
As a main course, Canarian cuisine offers a wide variety: Puchero Canario (vegetable soup with meat), rancho (vegetable soup with meat, chick-peas, potato and pasta), caldo de papas (potato soup with coriander); caldo de millo (potatoes soup with coriander and maize); potage de berros (watercress soup); potage de jaramago (hedge mustard soup) and potage de acelga (chard soup).
Dishes consisting of pickled or brined kid, rabbit, pork or veal are traditional as well.
Canarian cuisine also uses a wide variety of fish . Notable are cherne, vieja, sama, chicharros, etc. Among the most traditional Canarian dishes, we must mention sancocho , consisting of boiled salted fish (cherne), boiled potatoes, yam, gofio amasado with salt or sugar according to taste and accompanied by mojo.
Moreover, a wide range of soft, semi soft and hard cheeses from almost every village in the island can be eaten. Wines and desserts complete the tasty Canarian gastronomy. |
